Title: Ellen Ficklen's Watermelon Cooler

3cCubed watermelon, rind and seeds removed
1cOrange juice
2tbFresh lime juice
2tbLime marmalade or sugar (or more to taste)

Make the frozen watermelon cubes in advance and store them in a heavy-duty freezer bag for spur-of-the-moment use.

Spread the watermelon cubes, not touching each other, on a tray. Freeze until solid. Put the orange juice, lime juice and lime marmalade or sugar in a blender. With the motor running, gradually add the frozen watermelon cubes and process until the mixture turns to slush. If necessary, process in batches. Add additional lime marmalade or sugar to taste.

Variation: Add 1 tablespoon finely diced crystallized ginger while blending.

Per serving: 175 calories, 2 gm protein, 43 gm carbohydrates, 1 gm fat, 0 mg cholesterol, trace saturated fat, 8 mg sodium, 3 gm dietary fiber
